Good Morning Moon + Breakfast Recipe


                                   Good Morning Moon Recipe

I love stepping into my backyard in the morning and seeing the moon still high and visible in the sky with the sunrise. It’s a magical time of day and hopefully you have a moment to take it in from time to time. I created this breakfast recipe while feeling Inspired by such an occasion and decided to dedicate it to my favorite children’s book (Good night moon)

  • 1/3 Cup of almonds
  • 1/3 Cup of fresh dates (about four)
  • 3 Figs
  • 3 Strawberries
  • 1/2 Of a yellow peach
  • 1/2 Plumcot
  • 2 Slices of Kiwi
  • 1 Apricot
  • A pinch of cinnamon
  • 1/3 Cup of almond milk

If you have any bruised fruit you should use that first because it’s most likely to go bad if it stays in the fridge until a later date. IMG_6055 Take your almonds and chop them in your food processor to a granola consistency. IMG_6058 Place the almond granola in the center of your dish. IMG_6059 Then remove the pits from the dates by gently pulling them apart and cut the dates into 1 inch pieces. Line the dates around the almond granola in a circle in your bowl. IMG_6056 IMG_6057 IMG_6084 With your strawberries, figs and yellow peach take one strawberry and thinly slice and set aside. Take one fig and quarter cut and set aside. Save two slices of the yellow peach and set aside. IMG_6062 Place the rest of the fruit trio into your food processor. Purée until you have a nice fruit medley. IMG_6061 IMG_6064 IMG_6065 Scoop that out and around the almond granola on top of the dates in a full circle. Then artistically place the slices of fruit going in a circle in one direction around the almond granola. IMG_6066 IMG_6067 IMG_6068 Place two slices of kiwi at the center. Then carefully drizzle 1/3 cup of almond milk over the top of the entire dish and lastly, sprinkle with just a little cinnamon. IMG_6090 The layers of fruit in this dish create such a sweet complexity it will really be inspiring! I like to use a jam spoon because of the scalloped edge.
